We bottle all our wines under screwcap to ensure that you get to enjoy a quality wine without the possibility of cork taint or random oxidation issues due to cork.
Yes we do. We cross flow filter our wines before bottling and sterile filter our wines into bottle. To filter or not to filter can be a contentious topic in the winemaking industry but it is our belief that whilst filtering may alter the nature of a wine initially, over time the wine bounces back to its ‘pre-filter’ best. But most importantly it means that you, as our cherished customer, are always going to receive our wines the way they were intended.
Yes we do, but only if required, to ensure a stable quality product is bottled. We prefer wines that are brilliant in the glass and without any kind of protein haze or tartrates (wine diamonds) dropping out of the wine. We use bentonite (a natural clay) to protein stabilize the Chardonnay and Malbec Rose. We also add yeast and yeast nutrients to the Malbec Rose and in some of our Chardonnay barrels. We use sulphur dioxide judiciously to help keep the wines fresh and free of any harmful microbial issues. But by in large we steer away from using most additives. Less is more. But it is our belief that nothing at all can sometimes be worse.
We embrace vintage variation and try to make wines that reflect the variety, site and season from which they came. In a general sense our wines will have a similar style across vintages, but each wine will always have its own unique personality.
